Originally founded and named by the Ortiz family, who were from the state of Michoacan, Tarasco has been run by Tony (Tarasco) Cuevas since 1993. Tony was born in the south-central city of Puebla, in the state of the same name.
Tony's passion for popular, home-prepared traditional food started at an early age. Many of the dishes in his repertoire are recipes from his mother, grandmother, and grandfather. Before coming to Ballard, a neighborhood in Seattle, Tony had worked in a few restaurants in his native Puebla, where he went on to learn the flavors of authentic and classic central area folk cuisine. After his arrival, he also learned to cook dishes from different countries like Greece and Italy. Throughout the years, Tony has kept the timeless Pueblan favorite dishes on the menu but also constantly incorporating new recipes from his travels through Mexico.
